You may have heard about the lollipop style chicken drumstick but have you ever heard of the delicious butterfly drumstick?

A butterfly style drumstick means that you cut lengthwise from top to bottom, pushing the meat to the sides in order to flatten the drumstick.

Now you might ask yourself: why should I butterfly chicken drumsticks, it’s just more preparation and does it really make a difference?

Sure, taking an extra 10 minutes to cut the chicken drumstick and prepare it is a little more work but the cooking time will be also reduced because the meat is flat and even.

And does it make a difference?

You bet!

There are many reasons why the butterfly style drumstick is the preferred choice.

When you don’t use the butterflied method, the thick meat around the bone tends to cook unevenly and if you have too high of heat, the skin will burn before the chicken is fully cooked.

When you use the butterfly method, it creates a larger cooking surface allowing the meat to cook evenly and much quicker in about half the time.

And if you want added flavour to your drumstick, butterfly style is the way to go!

Regular drumsticks insulate the meat preventing internal seasoning.

When the meat is exposed and spread out, it is able to be seasoned throughout the drumstick.

Another benefit of the butterfly method is that the process causes the meat to brown and crisp up.

The savoury, sweet crispy bits add another level of complexity to the chicken.

How to Butterfly Chicken Drumsticks

The process is pretty straightforward and much easier than splitting chickens.

You will need a very sharp knife, a cutting board, and your chicken drumsticks of course.

Butterfly Method

  1. Flip the chicken drumstick to the side with the meat exposed at the top. This is the side to cut.
  2. Using a sharp knife, make one slice in the meat along the side of the bone. Be careful not to cut all the way through. Make a second cut along the other side of the bone, separating the meat so that it opens up flat. The bone should be completely exposed. Make sure to keep the meat attached to the bone and do not slice off the top or the meat from the back of the bone.
  3. Open it up and it’s ready to be seasoned for the grill!
