The word barbacoa is Spanish for barbecue not a Beach Boys song.
Barbacoa refers to a style of cooking outside as well as the wooden racks used in the actual cooking.
Today, barbacoa is most notably recognized as a term to describe meat, often whole lamb, mutton or goat that’s cooked over an open fire or more traditionally, in a fire-pit covered with maguey (agave) leaves.
Just like many traditional forms of outdoor cooking, people have adapted recipes to use traditional ovens, grills and even Instant Pots to make barbacoa that can come very close to the real deal.
Barbacoa meat can be cooked in its own juices with seasoning, marinades and spices often added during the cooking process.
Once the meat is very tender, it is shredded or chopped before being served with lime in tortillas or alongside a bowl of consommé (a broth made with drippings from the meat).
Barbacoa in Mexico is often served with chopped onions, cilantro, and various salsas.
The barbacoa seasoning is probably the main component that distinguishes this dish from other slow-cooked Mexican meat dishes.
