Hint: The best gravy for poutine is a combo of 2/3 beef stock and 1/3 chicken stock.

Remember: Use real cheese curds. Cheese curds can be found in white or yellow colour. The white cheese curds are the ones you want for poutine.

Cooking

Gravy

  1. Make ahead and re-warm or keep warm until your fries are ready.
  2. In a small bowl, dissolve 3 tablespoons of cornstarch into 2 tablespoons of water and set aside.
  3. In a large saucepan, melt 6 tablespoons of unsalted butter. Add a ¼ cup of flour and cook, stirring regularly for about 5 minutes, until the mixture turns golden brown.
  4. Add 20 oz of beef and 10 oz of chicken broth and bring to a boil, stirring with a whisk.
  5. Stir in about half the cornstarch mixture and simmer for a minute or so. (If you like your gravy thicker, add a more of the cornstarch mixture, in small increments, as needed to thicken.
  6. Season with pepper.

French Fries

  1. For Deep-Fried Fries: Prepare your potatoes (Russet potatoes work best) and cut into 1/2-inch-thick sticks. Place into a large bowl and cover completely with cold water.
  2. Allow to stand at least one hour or several hours.
  3. When ready to cook, heat your oil in your deep fryer or large, wide, heavy cooking pot to 300° F.
  4. Remove the potatoes from the water and place onto a sheet of paper towel. Blot to remove as much excess moisture as possible.
  5. Add your fries to the 300°F oil and cook for 5-8 minutes, just until potatoes are starting to cook but are not yet browned.
  6. Remove potatoes from oil and scatter on a wire rack.
  7. Increase oil temperature to 375°F and once the oil is heated to temperature, return the potatoes to the fryer and cook until potatoes are golden brown.
  8. Place cooked French fries into a paper towel-lined bowl.

Poutine

  1. Add your fried or baked fries to a large, clean bowl.
  2. Season lightly with salt while still warm.
  3. Add a cup of cheese curds on top of the French fries and then pour a ladle of hot gravy on top of the cheese curds.
  4. Add 3 tablespoons of your favorite ZEG sauce to the bowl and using tongs, toss the fries in the cheese, gravy, and ZEG sauce mixture.
  5. Serve immediately. This delicious, savoury, and flavour enhanced poutine will take it to a whole new level!
