Hint: Make a double batch and save one for later use (when kept frozen: 5-6 months). Just take out and reheat in microwave or oven (internal temperature of 165˚F).
Remember: Add your favourite ZEG Sauces at the end of cooking, to ensure each wing is coated and full flavoured.
Cooking
- Combine 2 1/4 cup flour, 1 tablespoon seasoned salt, 1/4 teaspoon ground cumin, 1/4 cup cornstarch, 1/4 teaspoon black pepper, 1 tablespoon paprika, 1 1/2 teaspoon chili powder,1 1/2 teaspoon salt in a bowl.
- In a separate bowl, whisk together 1 cup milk (buttermilk is best), 1 egg, 1 cup water.
- Cut chicken breasts into bite-sized pieces.
- Dredge the chicken pieces in flour mixture, dip into milk and egg mixture, then dredge the chicken again in the seasoned flour. Shake off excess flour.
- Deep fry coated chicken bites in hot canola oil until golden brown (internal temperature of 165˚F). Drain on paper towels.
- Place chicken bites in a large bowl. Pour your favourite ZEG Sauces over chicken bites and toss to coat.
- Serve boneless chicken bites with blue cheese or ranch dressing and of course celery and carrot sticks. The little bites will burst with flavour I bet you can’t just eat one! Enjoy!
