Cooking Ribs on the Barbecue

  1. In a large bowl, cover the chicken wings liberally with salt and pepper and let rest for 5 minutes.
  2. Oil your barbecue grill racks for direct grilling over medium heat about 350ºF.
  3. Grill the wings over moderate heat, turning frequently, until golden. You don’t want the wings to burn at all so keep a close eye on the flame.
  4. Cook the wings for about 20-25 minutes (until internal temperature of 165°F is reached)
