A simple and delicious snack (if you have a few), lunch (if you have a few more), and dinner (a whole plateful). But what is the food history behind this popular part of poultry? Before 1964, chicken wings were left over scraps after the whole chicken was butchered. They were either discarded or sold for mere pennies to poor families, who would make them into soup. When Teressa Bellissimo received a case of chicken wings by accident, she considered making soup for her customers at the Anchor Inn (Buffalo, NY) but there were just too many wings. It would have made way more soup stock than her patrons could possibly consume. Teressa was determined to find a way to make an edible dish out of the wings. After the Anchor Inn closed one night, Teressa cut the wings up to make what we call today a drum and a flat. She kept them unbreaded and deep fried them. After they were cooked, she added some hot sauce and arranged them with stalks of celery and blue cheese dressing. She served this dish to her son and a group of his friends. They loved the late-night snack so much that Teressa added the chicken wings to the menu at the Anchor Inn. Within a few weeks, the people of Buffalo had found a new favorite food! Not long after that, other restaurants in the Buffalo area started serving their own version of wings to their patrons and the Buffalo chicken wing was born!
