Hint: This meal tastes great as leftovers, making it a perfect meal-prep dish. You can even serve it with brown rice.

Cooking

  1. In a heavy bottomed pot, heat 2 tablespoons of olive oil over medium-high heat. Add 2 cups of quartered baby potatoes to the pot and season with salt and pepper. Fry until golden brown and cooked through, around 8-10 minutes, stirring a few times. Remove potatoes from the pot and set aside.
  1. In the same pot, brown 9 ounces of your favorite smoked sliced sausage for around 5 minutes in 1 tablespoon of olive oil over medium high heat. Remove the sausage from the pot and set aside.
  1. Add ½ an onion and 2 garlic cloves and cook for 1 to 2 minutes with remaining cooking oil. Add ½ of a (yellow, green, and red) bell pepper and 1 zucchini to the same pot and season with 3 tablespoons of your favorite ZEG Sauces. Cook for 2 minutes, until softened, stirring occasionally.
  1. Add the cooked sausage, and potatoes potatoes back to the pot and mix everything together. Add 1/2 cup low-sodium chicken broth and cook for 5 minutes more. Adjust seasoning with more ZEG Sauce if needed.
  1. Serve this quick and full flavoured meal hot and enjoy!
