Hint: Lamb ribs are fatty and need to be cooked a little longer to make sure the fat has time to render out. Separating the ribs will ensure quicker cooking time.
Remember: Because the flavor of lamb is rich and fatty, it’s best to serve these ribs with something green or acidic. Here are some suggestions: Whole Roasted Carrots, Cauliflower with Roasted Tomatoes, Roasted Mediterranean Vegetables, Cauliflower, Apple Salad, Rosemary Roasted Potatoes, and Caramelized Onions.
Cooking
- Pre-heat the oven to 350ºF and line a large baking sheet with aluminum foil or parchment paper.
- Place the ribs on the prepared baking sheet and drizzle your favourite ZEG Sauces over the meaty side of the ribs.
- Place the ribs in the oven and bake for 20-25 minutes then brush your favourite ZEG Sauces over the ribs for a final glaze.
- After 40 minutes, increase the temperature to 430ºF and allow the ribs to caramelize.
- Remove the ribs from the oven when they are sticky and caramelized (internal temperature of 135°F for medium rare) and serve hot. These lamb ribs will have so much flavour people will wonder how you did it! Enjoy!
