The Turkey is an icon of any holiday meal.

But do you know how this delicious bird came to be the megastar it is today?

The popularity of turkey began in the 16th century when an American colonist named William Bradford wrote how the colonists had hunted an abundance of wild turkeys in the autumn of 1621.

Shortly thereafter, the turkey appeared on Christmas tables in England where historians noted King Henry VIII being the first English monarch to have turkey for Christmas.

As word spread of this scrumptious bird, turkeys became commonly served at English Christmas dinners.

By the 19th century, the turkey had become a popular dish to serve on holiday occasions in North America.

The popularity of the turkey continued to grow as they were in abundance (estimated that there were at least 10 million turkeys in America at the time of European contact), they could be raised on a farm easily, and a single turkey was enough to feed a family.

But the turkey didn’t receive its iconic status until a writer named Sarah Josepha Hale, devoted an entire chapter in her book to a description of a New England Thanksgiving with a roasted turkey “placed at the head of the table.”

She also began campaigning to establish Thanksgiving as a national holiday in the United States which she believed would help unify the country as it teetered on civil war.

Her efforts finally paid off in 1863 with a presidential proclamation by Abraham Lincoln.

Although the wild turkey was considered endangered in the early 20th century, its population has risen once again into the millions.

Modern breeding practices have helped make turkeys both larger and cheaper than ever, ensuring their continued place at the head of the table.
