Have you ever been to your local grocery store and seen chickens advertised as broilers, fryers, or roasters and wondered exactly what this means?

Chickens need to reach an age and weight that allows it to be oven or grill roasted, resulting in tender juicy meat. Chickens are processed for different purposes and classified according to their use such as broilers, fryers, roasters, and stewers. 🐔 Broilers and fryers are chickens that weigh 3 to 4 pounds, are 7 to 12 weeks old, and as the name indicates, are best used for broiling and frying. 🐔 As the chicken becomes 10 to 12 weeks old, gains more fat, and weighs 2 to 7 pounds, they are referred to as roasters since they are most suitable for roasting or cooking on rotisserie grills. 🐔 The flesh of stewing chickens, which weigh up to 7 or 8 pounds and are over 10 months old, is not as tender as the meat of younger birds, so they are typically used for stewing or for commercial processing of canned chicken products. Knowing how little your chicken is makes for a big difference in flavour and taste! And as a basic guide, here are 7 easy steps to cutting up whole chicken: Tip: Use a very sharp chef’s knife to make cutting easier and a separate cutting board for to help avoid cross-contamination. Step 1 With chicken breast side up, pull each leg away from body, then slice through skin between breast and drumstick. Step 2 Turn chicken on its side. Bend each leg back until thighbone pops out of its socket. Cut through joint and skin to detach leg completely. Step 3 With chicken on its side, pull each wing away from body. Cut through joint and remove wing. Step 4 Lift up chicken and cut downward through rib cage and then shoulder joints to separate breast from back (save back for stock). Step 5 Place breast skin side down. Split center bone using a chopping motion, then slice through meat and skin to separate into 2 pieces. Step 6 To divide the legs, turn each skin side down and cut through joints (along white fat line) to separate thigh from drumstick.
