Hint: Try brining the potatoes with salty water for 20 minutes and then brush on oil with a sprinkle of salt before you wrap them in tin foil for the perfect potato every time!

Remember: Potatoes notoriously take a while to make but when you wrap them in foil, it helps steam the potato and cook it slightly faster. You can also bake the potato without tin foil for a crispier potato skin.

Cooking

Use baked russet potatoes and have a mixing bowl filled with your ZEG pulled pork covered in your favorite ZEG sauce.

  1. Make sure the potatoes are fully baked (you can easily push a fork through the potato) and the pulled pork is warm and smothered in your favorite ZEG sauce.
  2. Cut open each baked potato lengthwise and a short cut horizontally in the center. This helps the potatoes open wide to hold all your delicious toppings! Push on the sides of the potato to make it open but be careful hot potato!
  3. Add a little butter, salt, and pepper to each potato.
  4. Add the shredded ZEG pulled pork topped with shredded cheese and a drizzle of ZEG sauce over top.
  5. Garnish the potato with your favorite toppings such as sliced jalapeños, red onions, scallions, and/or a squeeze of lime juice.

Stuffed baked potatoes can be used as a snack or a meal, just add more or less of your favourite toppings. Don’t forget the ZEG sauce to give the baked potato a sensational boost of flavour!
