In North America alone, there are more than 200 varieties of potatoes sold. Each one of these varieties fit into 7 potato type categories: white, russet, red, yellow, purple/blue, fingerling and petite. With all of these varieties and the different methods to cook them, it’s hard to know which potato is best. Here is a quick summary so you get the perfect potato every time: White Potatoes White Potatoes have a thin skin, so they can be easily mashed without peeling. They have a creamy texture and mild flavor make them perfect for grilling, steaming and boiling. Russet Potatoes Russet Potatoes have an earthy flavor and are the perfect choice for baking and making light, fluffy mashed potatoes.
