Hint: Use a good sharp graded cheddar cheese on top of this soup for maximum flavour.
Remember: If you want thicker soup, combine cornstarch and a little bit of warm water in a small bowl. With the soup simmering over medium-low heat, whisk in the slurry. The soup should start to thicken almost immediately.
Cooking
- Grate 1 lb of peeled potatoes and finely chop one large red onion and dice 2 cloves garlic.
- Add 1 tbsp vegan butter or butter of your choice, grated potato, onion and garlic to a pot. Sauté gently over medium heat for about five minutes while gently stirring the mixture.
- Once it starts sticking to the bottom of the pan add 1L hot vegetable broth and 3 1/2 tbsp of your favourite ZEG Sauces. Simmer over medium heat for about 25 minutes until potatoes fall apart. Wisk the mixture until you are left with a creamy and thick soup. Serve hot and marvel at how much flavour is in this simple soup! Enjoy!
