Hint: Use a good sharp graded cheddar cheese on top of this soup for maximum flavour.

Remember: If you want thicker soup, combine cornstarch and a little bit of warm water in a small bowl. With the soup simmering over medium-low heat, whisk in the slurry. The soup should start to thicken almost immediately.

Cooking

  1. Grate 1 lb of peeled potatoes and finely chop one large red onion and dice 2 cloves garlic.
  2. Add 1 tbsp vegan butter or butter of your choice, grated potato, onion and garlic to a pot. Sauté gently over medium heat for about five minutes while gently stirring the mixture.
  3. Once it starts sticking to the bottom of the pan add 1L hot vegetable broth and 3 1/2 tbsp of your favourite ZEG Sauces. Simmer over medium heat for about 25 minutes until potatoes fall apart. Wisk the mixture until you are left with a creamy and thick soup. Serve hot and marvel at how much flavour is in this simple soup! Enjoy!
