Hint: Place your pork loin fat side up in your roasting pan. By having the fat on top, you are allowing the fat layer to baste the roast as it cooks. This step helps keeps the pork from becoming dry and tough.
Remember: The size and structure of a tenderloin make it perfect for cooking quickly on high heat but keep an eye on internal temperature.
Cooking
- Preheat oven to 350°F.
- Take your favourite ZEG Sauces and rub all over the pork tenderloin.
- Heat 1 ½ tbsp olive oil (or butter) in a large oven proof skillet over high heat. Add pork and sear until golden all over.
- When pork is almost seared, push to the side of skillet, add 3 very finely chopped garlic cloves and cook until golden.
- Add 2 tbsp of your favourite ZEG Sauces on top of seared pork. Turn pork once then immediately transfer to the oven.
- Roast 15 – 18 minutes or until the internal temperature is 155°F (Note 4).
- Remove pork onto plate, cover loosely with foil and rest 5 minutes.
- Drizzle your favourite ZEG Sauces as a final flavour touch, cut pork into thick slices and serve with your favourite side dish! Enjoy!
