Hint: Put a nice coating of olive oil on the brussel sprouts, enough oil to get inside the folds of some of the leaves.
Remember: Place them on the baking sheet cut side down. Turn down all those flat sides, and you’ll get the perfect browning.
Cooking
- Preheat oven to 450°F. Wash and dry the brussel sprouts (2 pounds = 8 servings). Then cut them in halves.
- In a large bowl, combine brussel spouts with 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large bowl.
- Transfer to a large baking sheet lined with aluminum foil. Roast at 450°F until golden and just tender when pierced with tip of a knife (about 20 minutes).
