One of the oldest foods has to be the kebab.

Simply skewering meat and vegetables on a stick or sword over an open fire may seem primitive but it is rich in tradition and flavour.

Excavations of a Minoan settlement revealed stone supports for skewers used before the 17th century BC.

In ancient times, Homer in the Iliad, mentions pieces of meat roasted on spits.

And the Mahabharata, an ancient Indian text also mentions large pieces of meat roasted on spits.

The method of cooking smaller chunks of meat on skewers would be practical in cities where small cuts of meat were available in butchers’ shops and where fuel for cooking was relatively scarce.

Because of the kebab’s economical, quick and delicious attributes, many cultures now have dishes consisting of chunks of meat cooked over a fire on skewers.

The word kebab or shish kebab may sometimes be used in English as a culinary term that refers to any type of small chunks of meat cooked on a skewer as the kebab is mainly associated with a diversity of meat dishes.

Though the word has ancient origins, it was popularized by Turks to refer to a range of grilled and broiled meat which may be cooked on skewers but also as stews, meatballs, and other forms.

The word kebab likely came to English in the late 17th century from the Arabic kabāb, partly through Hindustani, Persian and Turkish.

The Turkish word kebap is also derived from the Arabic word kabāb meaning roasted meat.

Kebab dishes have now been adopted and integrated with local cooking styles and innovations and can now being eaten as fast food or as the entrée of a delicious meal.

A great meat to put on a kebab is pork tenderloin.
