It began to refer to the cut of pork derived from the hind leg of a pig around the 15th century.

Ham is one of the oldest meats of civilized humans and many credit the Chinese as being the first people to record curing raw hams, while others have claimed the ham is a French invention.

A ham is usually preserved by salting, smoking or drying, or a combination of these methods.

You can also buy fresh hams that have not been preserved.

In North America, pork shoulders are frequently processed into hams and marketed as picnic hams, shoulder hams, etc.

🐷 Country Ham or Country-Style Ham – This is a dry-cured ham. The ham is hand rubbed with salt, sugar and nitrate; packed in the curing ingredients and usually smoked. A country ham is much drier than injected-cured hams and has a sharper flavour due to its high salt content.

🐷 Picnic Ham – This a cut of pork from the upper part of the foreleg and includes a portion of the shoulder. The Picnic Ham is cured in the same manner as a hind leg ham, giving it that great ham-like flavour.
