As many of you will remember from our past blog (Ribology 101), there are really only 2 types of ribs (okay 3 if you include rib tips).
The ribs you typically find in grocery stores that have the most bang for your buck are spareribs (aka side ribs) and are probably the most popular type of rib.
The other type of ribs are back ribs (also called loin ribs or baby back ribs), these tasty ribs are small and easy to hold.
The back rib is the part of the rib that is highest on the pig and are connected to the backbone.
Back ribs are considered by many to be the “white meat” of the rib.
They are a little more expensive than side ribs but they are also much leaner and more tender than spare ribs.
