Although there are countless methods for cooking ribs, one of the best and easiest methods for specifically cooking pork side ribs is called the 3-2-1 method.

The numbers refer to the amount of time you spend during the 3 stages of cooking the pork side ribs.

Even though it’s called the 3-2-1 method (total of 5 hours), it is recommended that you have at least 6 hours set aside just in case.

You can use this method on any quantity of ribs (i.e., a half rack to a dozen full racks).

It is advised that if you are cooking a large batch of ribs to rotate them halfway through the first step especially if you’re using the upper and lower sections of the grill racks.

Prepping The Ribs

To begin, remove the membrane from the bone side of the pork ribs.

To do this, take a butter knife in one hand and a paper towel in the other.

Start on a middle bone, work the tip of the butter knife beneath the membrane, then tear it off with the hand that’s holding the paper towel.

Pat the ribs dry with paper towel.

Apply your favourite ZEG Sauces to the front and back of the pork side ribs.

3 HOURS:

Set the smoker (or oven) to 225°F.

Once you reach the correct temperature, put the ribs on the rack or pan bone-side down.

Allow them to cook for 3 hours undisturbed, unless you need to rotate them to ensure even cooking.

After three hours, carefully remove the ribs from the smoker / oven.

Set them on a baking sheet or large platter.

2 HOURS:

Place the ribs on a double sheet of aluminum foil.

Drizzle more of your favourite ZEG Sauces on meaty side of the ribs.

Wrap them tightly in the foil, making sure to create a tight seal.

Return the ribs to the smoker / oven.

For this stage, you will want flip them to bone-side up.

Let the ribs cook for 2 more hours.

1 HOUR:

Take the rib rack out of the smoker / oven and carefully remove the foil wrapper.

Increase the smoker / oven temperature to 275°F.

When the smoker / oven reaches the correct temperature, set the ribs back on the cooking grate / pan with the bone-side facing down.

Let them smoke / cook for one hour or until the exterior forms a dark golden crust.

For additional flavour, add more at your favourite ZEG Sauces once the ribs have finished cooking.

Or let your guests choose their own sauce to drizzle over the ribs.

Serve hot.
